Dinner Last Night

Was a pretty casual and easy affair. I made Pizza Roll-ups, a recipe from the July/August 2000 issue of Quick Cooking magazine (now called Simple & Delicious.) Sides were salad and cut up fruit (mango, pineapple, cantaloupe.) Everyone enjoyed the roll-ups and ate well.

Pizza Roll-Ups
1/2 pound ground beef
1 can (8 ounces) tomato sauce
1/2 cup shredded mozzarella
1/2 tsp dried oregano
2 tubes crescent rolls
Cook and drain the beef. Remove from heat and add tomato sauce, cheese and oregano; mix well. Separate crescent dough into eight rectangles, pinching seams together. Place about 3 tbs of meat mixture along one long side of each rectangle and roll up, jelly-roll style. Cut into three pieces and place on greased baking sheet. Bake at 375 for 15 minutes.

Of course a ready made pizza sauce could substitute for the tomato sauce and oregano, and you can really use any cheese you like or have on hand. Yummy and also great as an afternoon snack.
